Pasta Primavera

This tastes so good, you won’t believe it’s diet!

Ingredients:

  • 3 cloves garlic
  • 4 C. raw vegetables
    • (use green or red bell pepper, 1/2 C. fresh or frozen broccoli cuts, cauliflower cut into small pieces, carrots cut into matchsticks, or any combination of these)
  • 6 mushrooms
  • 1 tsp. oregano
  • 1 tsp. garlic powder
  • 1/8 tsp. salt
  • 1/4 C. tomato sauce
  • 1 TBSP. grated Parmesan cheese
  • 1 TBSP. olive oil (or other oil)
  • 1-1/2 C. chicken broth

Instructions:

Using large skillet, sauté fresh garlic and veggies in oil. Add sea­sonings, broth and tomato sauce. Cook over medium heat until vege­tables are tender-crisp. Serve over cooked spaghetti and sprinkle with cheese. Makes 2 servings.
