Berta’s Pumpkin Bread

Breads Muffins and Rolls

Hearty, sweet and spicy!

Ingredients:

  • 2/3 C. shortening
  • 2 C. white sugar
  • 2/3 C. brown sugar (packed)
  • 4 eggs
  • 1 can (1 lb.) pumpkin
  • 1 C. whole wheat flour
  • 1 C. white flour
  • 2 tsp. soda
  • 1-1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 2/3 C. each chopped nuts and raisins

Instructions:

Heat oven to 350 degrees. Grease two 9 x 5 x 3 or three 8-1/2 x 4-1/2 x 2-1/2 loaf pons. Cream shortening and sugars until fluffy. Stir in eggs and pumpkin. Blend in flours, soda, salt, baking powder, cinnamon and cloves. Stir in nuts and raisins. Pour into pans and bake for 70 minutes or until toothpick placed in center comes out clean.
