Chili Relleno Bake

Ingredients:

  • 1 pound ground turkey
  • 1/2 cup onion chopped
  • 2 cloves garlic, chopped
  • 2 cans (4 oz each) whole or chopped green chilies, drained and seeded
  • 2 cups shredded cheddar cheese
  • 4 eggs
  • 1/4 cup flour (I use almond flour)
  • 1-1/2 cup milk
  • 1/2 tsp salt

Instructions:

In large skillet, cook turkey over medium heat until browned. Add onion and garlic; cook until onion is limp.
Line 9×9″ baking dish with half the chilies. Add meat mixture and top with remaining chilies; set aside .
Beat together 1 cup cheddar cheese, eggs and flour until smooth; add milk and salt. Blend well.
Pour egg mixture over casserole.
Bake uncovered at 350 degrees for 40 minutes or until knife inserted comes out clean. Sprinkle with remaining cheese.
Let set for 5 minutes.
