Irish Cabbage and Potatoes

Ingredients:

  • 3-1/4 lbs. fresh or frozen peas
  • 4 TBSP. butter
  • 1 head lettuce
  • 3 TBSP. flour
  • 1 tsp. turmeric
  • salt and pepper to taste
  • 1 tsp. sugar
  • 5 leaks or 1 large onion
  • 1 tsp. lemon juice
  • 2 TBSP. curry powder
  • 5 C. chicken stock
  • 1 C. half and half
  • Salt and pepper to taste

Instructions:

Sauté leeks (or onion} in butter in o Dutch oven. Add lemon juice. Shred lettuce. Add lettuce and peas to leeks. Cook on low heat 5-6 minutes with cover. Mix together and add flour, sugar, curry, and turmeric. Add chicken stock. Bring to a boil and then simmer for 10 minutes. Puree mixture in a blender, return to pot and continue to simmer while you odd the half-and-half. Serve hot or cold, garnished with tiny ro..,. peas, fresh parsley or fresh mint leaves.
