Rich and t-t-t-tasty tasty!
Ingredients:
- Boil in water until tender:
- 2-3 potatoes, peeled and diced
- 4-5 carrots, peeled and diced
- Make I recipe of white sauce:
- 2 TBSP margarine or butter
- 2 TBSP flour
- 1/4 tsp. salt
- I/8 tsp. pepper
- 1 C. milk
Heat margarine in 1 1/2 qt. saucepan over low heat until melted. Stir in flour, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in milk.; heat to boiling, stirring constantly. Boil and stir I minute.
Add the following to the white sauce:
- 3 C. chicken stock
- 2 C. half-and-half
- 4 C. grated cheese (medium cheddar)
Add salt, pepper and parsley to taste. Add cooked potatoes and carrots.
