This tastes so good, you won’t believe it’s diet!
Ingredients:
- 3 cloves garlic
- 4 C. raw vegetables
- (use green or red bell pepper, 1/2 C. fresh or frozen broccoli cuts, cauliflower cut into small pieces, carrots cut into matchsticks, or any combination of these)
- 6 mushrooms
- 1 tsp. oregano
- 1 tsp. garlic powder
- 1/8 tsp. salt
- 1/4 C. tomato sauce
- 1 TBSP. grated Parmesan cheese
- 1 TBSP. olive oil (or other oil)
- 1-1/2 C. chicken broth
Instructions:
Using large skillet, sauté fresh garlic and veggies in oil. Add seasonings, broth and tomato sauce. Cook over medium heat until vegetables are tender-crisp. Serve over cooked spaghetti and sprinkle with cheese. Makes 2 servings.
